Locking Out The Cold

Locking Out The Cold

History and Hygge at The Vault

By: Donna Doouss

February in Centre Wellington often feels like a test of endurance. The wind whistles down St. Andrew Street, and the limestone buildings of Fergus take on a beautiful but chilly frosted glow. During these weeks, we all look for a "third space"—somewhere between home and work that feels warm, welcoming, and a little bit special.

This month, my "Monthly Gem" is a place that literally locks the cold out: The Vault Coffee and Espresso Bar in downtown Fergus. Located in the historic Marshall Block (101 St. Andrew Street West), this isn't just a coffee shop; it’s a piece of local history that you can sit inside and enjoy.

A Coffee Shop with a Literal History
If you’ve ever walked past the corner of St. David and St. Andrew, you’ve seen the stunning round-top windows that define this building.  Built in 1883, it famously served as an Imperial Bank of Canada brand for over 50 years.  A few years ago, under previous ownership, the building underwent a massive, award winning restoration that revealed the soaring heights and architectural bones that make the space feel so grand today.  It even won a provincial heritage award for the way it preserved the integrity of the Marshall Block while repurposing it for the community.  But the real star of the show? The vault itself. Unlike many historic buildings where old features are boarded up, The Vault Cafe has kept the original, working heavy metal bank vault. It’s now one of the most unique "nooks" in the county. There is something incredibly cozy about sitting inside a space designed to keep things safe—it’s the ultimate "Hygge" experience.

The Lunch Experience: Pesto, Goat Cheese, and Warmth
I was there recently for a casual lunch with friends, and even though it was grey and biting outside, the vibe inside was pure sunshine. I spent some time in the vault at the Vault, catching up and enjoying the slower pace that February allows.

If you’re heading there soon, I have two words for you: Pesto Chicken. I ordered the Pesto Chicken and Goat Cheese sandwich, and it was absolutely "delish." The creaminess of the goat cheese paired with the savoury pesto is the exact kind of soul-warming food you need this time of year. I paired it with a Chai Tea Latte—the spice of the chai is the perfect companion for a cold afternoon.

Why It’s a "Donna’s Gem"
In my "Experience the Difference" philosophy, I always look for businesses that prioritize local connection. The Vault is a family-owned beacon in our community. They source their beans with care and create a space where you’ll see everyone from young entrepreneurs on laptops to retirees sharing a laugh. It’s a reminder that Fergus isn't just a place where we buy houses; it's a place where we build lives.

Before you head out, I highly recommend visiting their website at www.thevaultfergus.com to browse their full menu and see some of the other seasonal treats they have in store.

Next time the February blues start to set in, head downtown. Grab a seat in the vault, order something with pesto, and take a moment to appreciate the history that surrounds us. It might be cold outside, but it’s always warm in here.
