A Taste of Spain in the Heart of Fergus

A Taste of Spain in the Heart of Fergus

Why Tapavino is Our Ultimate Escape

By: Donna Doouss

If you’ve lived in Centre Wellington for any length of time, you know that our culinary scene is punching well above its weight class. But even in a town full of incredible eats, there is one place that my husband and I find ourselves returning to time and time again when we need to truly "unplug."

That place is Tapavino Wine & Tapas Bar.

Located at 216 St. Andrew Street West in downtown Fergus, Tapavino is the definition of a "hidden gem." It isn’t just a restaurant; it’s a labor of love run by a husband-and-wife duo who bring the soul of the Mediterranean to our doorstep.

Meet the Team: Robynne & Craig
The magic of Tapavino starts with the people. Robynne, the head of house, manages the front with a grace and warmth that makes every guest feel like they’ve been invited into a private home. She is the keeper of the atmosphere—ensuring the music, the lighting, and the pace of the evening are exactly right.

In the kitchen, her husband Craig serves as the Executive Chef. Having run a successful tapas bar in Spain for years before moving to Canada, Craig isn't just "making tapas"—he’s sharing a culture. His philosophy is simple: celebrate the amazing bounty of Wellington County by using authentic Spanish techniques.

The "Slow Food" Philosophy
One thing you need to know before you book your table: Tapavino is not a "speedy turnaround" restaurant. In a world of fast food and 45-minute table limits, Tapavino invites you to do the opposite.

The atmosphere is intentionally relaxing. It’s the kind of place where the wine is poured slowly, the dishes arrive as they are ready, and the conversation is the main course. Because it is a "wee" and intimate space, reservations are a absolute must. You won't get in without one, but that’s part of what makes the experience so special—it never feels crowded or rushed.

On the Menu: Local Meets Global
The menu at Tapavino is a tribute to our local farmers. You’ll see names like Beverly Creek Farm, Fraberts Fresh Foods, and Dixon’s Distilled Spirits highlighted in the ingredients.

Some of our personal must-try items include:

  • The Gin & Beet Cured Salmon: Using Dixon’s Wicked Citrus Gin (from right here in Guelph!) and fresh beets from Fraberts.
  • Tapavino Lobster Rolls: Featuring East Coast lobster in a classic creamy thermidor sauce.
  • Spanish Meatballs: Made with Beverly Creek Farm beef in a rich tomato sauce that you’ll want to soak up with every last bit of bread.
Whether you are catching up with old friends or planning a romantic night out, Tapavino reminds us that the best things in life—and the best meals—are meant to be shared.
